We have around 5 users on a Open Source version of zimbra - how easy will it be to transfer data to a new account on your servers?

Not difficult. Your 5 accounts could be transferred using IMAPSync. This will copy any emails across but the contacts and calendar entries will not be transferred and should be migrated using .csv files.
