Do emails sent from the customer server(s) show up in the Continuity Mailboxes?

Yes, but the feature must be enabled in the control panel and the customer must configure their server(s) to relay all outgoing mail via the In-Tuition smart host. Please read this article which explains about emails sent internally between users.
